Beastro Scotch Egg

Ingredients

9 Free range eggs we love Clarence Court eggs +

Simply served with some dressed leaves or some delicious spicy mustard

(1 to coat the eggs)

300g Sage and onion sausage meat

300g Venison mince

300g Minced black pudding

Seasoned plain flour

Japanese bread crumb


Method

Boil eggs for 5 minutes and 30 seconds then plunge into ice bath

Mix together the meats and roll 100g round each chilled egg

Dust the egg in flour, the dip in egg yolk and then roll in bread crumbs

Deep fry until brown all over then for 7 minutes pop in the oven at 180oc

Serve and enjoy
